Asamushi Sencha, Japan

We've tasted many Senchas, but it was this example from Kagoshima that really caught our attention. Made with spring harvested leaves from the Asanoka cultivar, the balance and richness of this tea is second to none. As with the best Japanese teas, this Sencha is a collaboration between the growers and the tea masters (aka 'Chashi') who finish it. The award-winning Chashi worked closely with the farmers to ensure the leaves were only gently steamed after harvesting, letting them them bring out the tea's full character in the roast.

Kagoshima is in the south of Kyūshū, the most southwesterly of Japan's main islands. Characterised by its southern volcanic peaks, lush plains and pristine Pacific coastline, it's a really stunning region. Centred around its deep bay and the active volcano Sakurajima, Kagoshima is one of Japan's top tea-producing regions. Blessed with subtropical warmth, mineral-rich soils and cool night temperatures, its tea bushes thrive in the mist-shrouded foothills. The region's teas are famed for their deep colour and complex aromas, and this nourishing Sencha is a fine example.

THE ART OF PREPARATION

ASAMUSHI SNECHA GREEN TEA

  • 2 TPS

This is our recommended brewing guide, but by all means adjust to your own taste.

  1. Warm your teapot and cups with boiling water.
  2. Discard the water and add two level teaspoons of tea to your pot.
  3. Add 200ml / 7oz water (i.e. one teacup or small mug) at 80°C / 176°F. If you don't have a thermometer, let the boiled kettle sit for six minutes.
  4. Place the lid on the pot and steep for two minutes. Stir, then strain the tea into your cup.
  5. To re-steep the leaves, repeat steps 3–5.
Makes one cup. For more, add an extra teaspoon per person and multiply the amount of water accordingly.
Always use freshly-drawn and, where possible, filtered water.

Simply stunning

This is a wonderful tea! I love to drink green tea in the afternoon and this Sencha is a real treat. It's soft, comforting and smooth. The second steep was even more enjoyable than the first. The thing that I love about the Galerie du Thé teas is that the tasting notes completely marry up with the taste when you brew it at home. Highly recommend.

An Unexpected Treat From a New Tea Seller

On first inspection of the leaf I know I’m in good company – the needle-fine leaves are a deep, rich green colour – both the sign of a quality sencha. On the nose the dry leaf is a buttery grassiness, and on the wet leaf the smell is just what I’d imagined – grassy green fields and wet hay in spring, lightly coated in morning dew. I had to stick my face inside the pot and inhale the smells of spring meadows for a few minutes before brewing!
Sure enough the flavour follows the promise of the nose and eye sensations. The liquor colour is a deep satisfying green and has some thickness to it. On the tongue there’s a full grassy note and a lightly sweet aftertaste with a completely clean finish. Specific flavours include buttered, steamed spring vegetables such as asparagus.
There were no bitterness or unwanted edges. It has a completely clean and smooth mouth feel with an instant warming sensation. It has the staple umami element that you’d expect of a sencha. It makes you feel as if you are eating a satisfying meal which manages to be both sweet and savoury at the same time. This will go perfectly with my all time favourite food – sushi.
The leaves, even after brewing, remain a deep dark green colour. I have to say I’m impressed.
