Tung Ting, Taiwan

We sourced this fine amber oolong from Lugu Township (aka 'Deer Valley') in the western foothills of Dong Ding mountain. The leaves were plucked in the early spring from a garden at around 700 metres above sea level. Local tea master A-Wei gently withers and partially oxidises the leaves before they are rolled and dried. We particularly love this tea's warm floral aromas, panettone-like fruitiness and rounded feel, plus its mineral-like finish that gives us an uplifted yet calm feeling.

Tea bushes were first planted around Nantou County's Dong Ding mountain in the mid 19th century. With its misty slopes resembling the landscapes of Fujian province, a tea cultivar known as Qing Xin ('Chin Shin') was brought over from Anxi county. Many factors influence the quality of Taiwanese oolongs: the unique terroir and age-old production techniques are key, but we'd argue it's the Qing Xin cultivar that really plays the starring role. While it may be a slow-growing and temperamental plant, the soft stemmed (Qing Xin translates as 'Green Heart') bush produces uniquely delicate leaves that seem to capture the very essence of spring.

THE ART OF PREPARATION

TUNG TING GREEN TEA

This is our recommended brewing guide, but by all means adjust to your own taste.

  1. Warm your teapot and cups with boiling water.
  2. Discard the water and add two level teaspoons of tea to your pot.
  3. Add 200ml / 7oz water (i.e. one teacup or small mug) at 95°C / 203°F. If you don't have a thermometer, let the boiled kettle sit for two minutes.
  4. Place the lid on the pot and steep for three minutes. Stir, then strain the tea into your cup.
  5. To re-steep the leaves, repeat steps 3–5 (up to three times).
Makes one cup. For more, add an extra teaspoon per person and multiply the amount of water accordingly.
Always use freshly-drawn and, where possible, filtered water.

My favourite Oolong

Received the selection pack as a gift, and although I generally loved the variety, this oolong is my favourite. The sweet aftertaste note is so pleasant, as well as the general smoothness of the experience. I was recommended to try this with an almond croissant, which was a very lovely combination. Simply 10/10.

Sweet crowd pleaser

An absolute crowd pleaser! Discovering an oolong like this with the floral notes and sweet after taste is wonderful. Introdocued this in my fist post lockdown dinner party, and it couldn't have been more well received. Also, some thought it was even better on sceond steep, which is always a good sign in my book.

This Tung Ting delivered a wonderful tea session.

This is a medium-roast oolong, on the lighter side for Tung Ting. This suited me perfectly as I have a hard time with most heavily roasted oolongs.

I was surprised at the suggested brewing parameters--2 tsp, 200ml, 95C, 3 min--but decided to go with them. I steeped the leaves in my porcelain teapot. Each steep was about 3 minutes.

The first steep reminded me of warm oats with sweet milk and a gentle floral note. The second steep was floral and mineral with a hint of apricot pit. The third steep was very floral. It had good salivation, minerality, and a very long finish. The steeping recommendations only promised three steeps, but I pushed on. The 4th steep was incredibly floral, even deeper salivation and that great finish again. In the fifth steep, I reduced the amount of water a bit. It tasted very similar to the 4th steep. These leaves had more to give but I reached the time of day when I had to stop drinking tea.

I could not believe how many minutes total I steeped this tea and how it went from good to great across the steeps. This Tung Ting delivered a wonderful tea session. This tea arrived in a stunning copper-colored tea tin.
